March 14th was National Potato Chip Day! According to the Agricultural (Ag) Marketing Resource Center, potatoes are the “fourth most important food crop in the world,” as well as the “leading vegetable crop in the United States.” More than half of the annual potato supply comes from the states of Idaho and Washington, 441 million cwt (hundredweight) (2016) to be exact. The average price for all potatoes has grown as well: in 2016, potatoes were $9.08 per cwt, up from $8.76 in 2015.

So where do potatoes go? Ag Marketing also found that nearly 60% of potato sales are to processors to be made into French fries, chips, dehydrated potatoes, and other potato products. The rest go to fresh markets, fed to farm animals, or re-used as seed tubers for growing the next season’s crop. Learn more about manufactured products here.
